Mezcal Negroni

Equal parts mezcal, sweet vermouth, and Campari, stirred and strained. The smoky mezcal cuts through the Campari's bitterness beautifully.

Ingredients

  • 1 oz mezcal
  • 1 oz sweet vermouth
  • 1 oz Campari
  • Orange peel (for garnish)
  • Ice

Instructions

  1. Stir: Combine mezcal, sweet vermouth, and Campari in a mixing glass. Add ice and stir for 20–25 seconds.

  2. Serve: Strain into a rocks glass over a large ice cube.

  3. Garnish: Express an orange peel over the drink and rest it on the rim.

Notes

A direct swap of gin for mezcal. The smoke cuts through the bitterness of the Campari in a way gin cannot. Use a mezcal with a pronounced but not overwhelming smoke so it doesn't overpower the vermouth. Carpano Antica or Cocchi di Torino both work well as the vermouth.
