Mezcal Sour

Mezcal shaken with lemon juice, simple syrup, and egg white. Silky, foamy, and balanced with a touch of smoke.

Ingredients

  • 2 oz mezcal
  • 0.75 oz fresh lemon juice
  • 0.75 oz simple syrup
  • 1 egg white (or 0.5 oz aquafaba)
  • 2 dashes Angostura bitters
  • Ice

Instructions

  1. Dry shake: Combine mezcal, lemon juice, simple syrup, and egg white in a shaker without ice. Shake hard for 15 seconds to emulsify the egg white.

  2. Wet shake: Add ice and shake again for another 15 seconds.

  3. Serve: Double-strain into a chilled coupe or rocks glass.

  4. Garnish: Dot the foam with Angostura bitters and drag a toothpick through to create a pattern.

Notes

The egg white creates a silky texture and a thick foam that carries the bitters garnish. Aquafaba (the liquid from canned chickpeas) is a reliable vegan substitute in the same volume. Lemon juice is traditional for sours, but lime works if that's what you have.
